COOKING

The brewing of the agave piñas takes place in a conical, stone oven, Chilean style. Using tepehuaje firewood to obtain the perfect smoking and the best concentration of sugars.
MILLING

Once the piñas are cooked, they go to a traditional tahona pulled by horses to be grounded, extracting the juice or “tepache”
FERMENTATION

The result of the milling, commonly known as “Bagazo” is transported to sabino tubs so it can be fermented with 100% natural yeast provided by the region’s environment, hence its great flavor and excellent smell.
DISTILLATION

A double distillation process overwatched by our Maestros Mezcaleros takes place in copper stills from where it obtains the crystalline properties and preserves its exquisite essence of each agave.
